If you love chocolate fudge, then you will love this gooey recipe, which is so soft and buttery and easy to make. Plus between me and you they are healthy too… SHH! They will never suspect they’re made with only four ingredients that are so wholesome!
I was so happy the day I found out that cacao powder is a super food. I couldn’t believe it that chocolate made the right way can actually be good for you and not just the bitter kind.
As I began to develop treats such as this one using cacao powder, whole foods, and non-refined plant-based ingredients, I got even more ecstatic.
These pieces of fudge don’t travel well, so I don’t take them on New York jaunts, but instead save them for at home after dinner treats straight out of the freezer when I am ready for one (or two).
They make about 16 pieces of fudge, the size of a hole in a mini cupcake tin, or approximately 8 large pieces if you are using a normal sized cake tin. These are quite rich, so I usually need one small piece, but on other days I have got carried away and ate quite a few more (shh!) as they taste so good.
I decorated these with coconut flakes this time, but I sometimes use crushed nuts, cacao nibs or goji berries. Enjo
