Chocolate Coconut Bites

I’m in love with the coco-nut!  These Chocolate Coconut Bites are little balls of health heaven!  A great snack and they’re approved by my husband!  He hasn’t even got a sweet tooth, but nevertheless, he’s always asking me to make these.  So I love to whip them up for him (and for me too… obviously!)

They’re plant-based, made with whole ingredients without dairy, animal or any refined stuff.  Plus they can be made raw.  I try to eat alternatives for sugar as much as I can and never use refined sugar in my recipes. And as always, I try to use superfoods.

Coconut oil, for example, strengthens your immune system, helps with both weight loss and digestion and has the good fats.  Plus, I use raw cacao in a lot of my recipes instead of cocoa powder.   It is a great superfood with antioxidants, fiber and healthy fats.  Note: Always use raw cacao without dairy to reduce the antioxidants you absorb.

I made these good for you treats for the first time on Valentine’s day for my husband, as I think home-made gifts can be the most thoughtful sometimes. To present them to him, I simply used an old, empty box of chocolates we had and replaced it with these treats…wrapped them up and then voila!  It was on an extremely cold, New York winter’s day and so we didn’t leave the house…my husband munched on these whilst we snuggled on the sofa and read our cards.

I now make these all the time.  They taste just like the dark chocolate Bounty’s I used to eat (similar to Almond Joy’s in the States).  If you prefer milk chocolate, but like to avoid dairy, you could always add a non-dairy version, such as coconut milk or almond milk to the chocolate.  Enjoy!

Ingredients

Instructions

  1. Soak coconut in boiling water for ten minutes. Drain the water (Miss this step if you prefer raw food, as it is not imperative).
  2. Place coconut and other coconut balls ingredients in a blender until smooth. (This will likely take several minutes - spoon the mixture around the blender if needed).
  3. Roll into coconut balls and place on greaseproof paper. Freeze for fifteen to twenty minutes.
  4. Add all chocolate ingredients together, ensuring the coconut oil is melted.
  5. Dip frozen coconut balls in the chocolate. Freeze final bites for ten minutes. Either eat as is straight from the freezer (harder version) or place bites in the fridge (typical, softer version). Enjoy!
