Choc Orange Every Day Bites (GF & Vegan)

When I created these energy bliss balls, EXCITED would be an understatement to describe how I felt!  I knew for quite a while that taking better care of my body was critical in feeling better.

However, I thought I’d always have to eat dull food to take care of myself properly…No wonder I was still in no rush to make the changes I needed to make.

But then everything changed the day I created these little bites of heaven…So delicious AND healthy AND filling…and packed with so much goodness!  By eating these in replacement of my usual chocolate bars and cakes I started to feel so much better and saw a difference in my skin!

  • Antioxidants and omega-3 fatty acids from the seeds
  • Fibre from the seeds and dates
  • A metabolism boost from the coconut oil and shredded coconut
  • Better blood sugar control from the maple syrup
  • Digestion, immune and heart support from the cacao powder and nibs

And once I decorated them with shredded coconut, they looked as good as they taste.  From then onwards I knew there was a way that healthy food could be exciting, delicious and filling.

I make these energy balls every single week.  I eat them as a snack, before or post a workout, sometimes for dessert, or occasionally I have a couple for breakfast with a decaf almond milk latte after my daily hot water & lemon liver cleanser.

I find them just so versatile, quick and simple to make that I know I will never stop making and eating them…why would I?

Makes approx. 15 balls.

Instructions

  1. Mix all of the ingredients apart from the coconut and the zest together in a large mixing bowl until it forms a brown mixture. Add the zest and mix again.
  2. Pick up an inch of the mixture and roll into a small ball and repeat until there is no more mixture left.
  3. Next roll each of the balls in the coconut shavings. The balls are best after placing them in the fridge for 30 minutes, but you can eat them straight away. Enjoy!

Notes

*It is often easier to blend the dates for a few seconds before adding to the mixing bowl.
